Secretary's Column: Celebrating Our Nation's Agricultural Abundance this Thanksgiving

Thanksgiving is a celebration of the harvest and the abundance of food we are able to share with our friends and family. This Thanksgiving, take a moment to thank the farmers and ranchers who make our nation’s agricultural abundance possible. Without them, the safe, abundant and affordable food we’ll put on our tables at Thanksgiving would not be possible.

At the same time, this Thanksgiving, it is important to remember those less fortunate. Many people will donate time, food or other resources to a food bank to brighten the holiday for families in their communities, and I am proud to say that many USDA employees are among them. I am also proud that through our People’s Garden Initiative, we’ve been able to donate 3.9 million pounds of fresh produce to food banks across the country over the last few years.

Turkey Tips Step 4: Loving Your Leftovers

It’s over.

All of your guests have scraped their Thanksgiving dinner plates clean and have migrated from the dinner table to the couch.

While you may want to immediately relax and celebrate after preparing a successful meal, it’s important that you first refrigerate any leftovers within two hours. Prompt storage can prevent pathogenic bacteria that cause foodborne illness from growing on your leftovers. These bacteria can’t be smelled or tasted.

Before You Slice the Turkey, Give Thanks to Those Wild Cousins

According to USDA’s Agricultural Marketing Service, the U.S. is the world’s largest turkey producer and largest exporter of turkey products. An estimated 46 million turkeys will show up on American tables this holiday, and most of those will come from turkey production facilities.

A much smaller percentage featured on the holiday table will be wild turkeys hunted on private and public lands. There are more than 7 million wild turkeys roaming the countryside, but their numbers were not always that robust. According to the National Wild Turkey Federation, which partners with the U.S. Forest Service, the tasty game bird native to the U.S. faced extinction in the 1930s.

What Most People Don't Realize is Behind Their Thanksgiving Dinner

You can picture it now, can’t you? The familiar sounds of a parade or football game playing on the TV while little ones chase each other through the house. More friends and family members than you can ever remember in one place at the same time. And the aroma … those delightful smells that let you know it’s a holiday.

You see the table surrounded by mismatched chairs, dinnerware and cutlery. And on that table, neatly decorated with the rich colors of the season, sit bowls filled with traditional fare and in the center of it all, the pièce de résistance – the golden brown bird around which the entire meal is built. Turkey. The year’s most prestigious meal!

Thanksgiving Is a Great Time to Start Reducing Food Waste with Friends & Family

Thanksgiving is a time to appreciate all that is good in our lives and to spend it in the company of friends and family while enjoying great food.  It is also a time to reflect on the bounty of our food supply.  Each year, as I put away the leftovers from my Thanksgiving dinner, I marvel at the abundance.

I also can’t avoid pausing to consider how much food is wasted in this country.

USDA estimates that on average, American consumers waste about one-fifth of food that is available to them, equivalent to about $371 per person annually.  That’s enough money to buy about 21 whole turkeys for each person in the country.

USDA’s What’s Cooking website serves up cost effective, healthy recipes

The busy holiday season has begun and families everywhere are starting to plan ahead.  If you’re looking for easy to make, nutritious family meals that you can cook quickly on a tight budget, USDA is here to help with a new web tool, called What’s Cooking? USDA Mixing Bowl.

As Americans prepare for the annual holiday harvest that is Thanksgiving, the American Farm Bureau Federation estimates they can expect to spend an average of $49.04 on a meal for a family of 10.  Our What’s Cooking? tool offers families lower cost alternatives, not just for the holidays but for every day.

Giving Thanks to Local Farmers

On Thanksgiving, friends, families and communities come together across America to give thanks and celebrate the autumn harvest.  I love the opportunity to reflect on all that I am grateful for, including the  hard-working farmers and ranchers who provide the delicious and nutritious food for the Thanksgiving table.  I also enjoy making my favorite traditional dishes with fresh, local ingredients that support the farmers and ranchers in my own community.

Secretary Vilsack has identified local and regional food systems as one of four pillars of USDA’s work to help revitalize the rural economy, create jobs and improve access to fresh, healthy food for millions of Americans.   Buying local supports the farmers and small businesses in your community, making it the perfect way to say thank you.

Be Prepared for Winter Driving in National Forests - Your Life Could Depend on it

The Thanksgiving holiday weekend tradition has long included the unofficial kick-off to ski season and a time when families head out to find their Christmas tree, and many times those events involve a trip to U.S. Forest Service lands.

Recreationists find some of the best downhill, cross-country and snowshoeing opportunities with 122 ski areas in 13 states using a total of 182,095 acres of Forest Service-managed land. Add to those opportunities snowmobiling and winter camping, which makes public lands a great family destination. With a permit, you can even find your perfect Christmas tree.
