Spice It Up in the New Year - MyPlate Holiday Makeover Week 8

I love mushrooms and could probably eat them every day. They come in a variety of sizes, shapes, colors, textures, and flavors and can be worked into every meal. On their own, mushrooms are pretty healthful – very low in calories, free of cholesterol and (almost) free of fat. They are also naturally low in sodium, high in potassium, and are generally high in vitamins and minerals.

Stuffing mushrooms just makes something wonderful ever better!  But what you stuff in these tasty little vegetables can make or break the dish. Typically, mushrooms are stuffed with foods containing saturated fats and sodium. So, if you’re trying to watch one or both of these in the New Year, consider various herbs and spices!

USDA Makes Meat and Grain Serving Flexibilities Permanent

As a mother and a grandmother, and as a school nutrition professional who has served at the local, state and national levels, I know the unique challenges and rewards that come along with helping to raise children—particularly when it comes to good nutrition.

Feeding kids, and feeding them well, can be tough, but I am proud to say that with the strong support of parents, our schools are making a real difference in the health of our nation’s children.

We at USDA have been working closely with schools during the transition to the updated meals. We have listened to school nutrition professionals, teachers, administrators, parents and students themselves. We have made tweaks and changes to the new meals along the way, based on feedback from their real world experiences.

With two little ones in the house, I’m always looking for ways that I can introduce them to new flavors and textures of foods and beverages. This Sparkling New Year’s Cider recipe does just that! The 100 % apple juice is familiar and adds a touch of sweetness, while the cloves, nutmeg, and cinnamon introduce them to new spices. The bubbles from the sparkling water also provide a fun new feeling for their mouths. Of course, adults can enjoy this beverage too!

My recipe includes spices to add a special holiday flavor.  If you aren’t familiar with star anise or cloves, you can often find them in the baking or spice section of your local grocery store. Some stores sell them individually in the bulk shopping aisle, so you only have to pay for what you need. You might also be able to find these ingredients at a discount store or specialty market.

A Helping Hand for Those Who Serve

This includes returned servicemen and women who spent holidays away from their families, missing major milestones while abroad in service to their country; previous generations who have worked hard to build our American infrastructure brick by brick; and even people working in the service industry across the nation.

I was first introduced to banana pudding, a traditional southern dessert, during the holidays when I moved to Virginia from North Dakota. It tasted great, but I remember leaving the dinner table with an uncomfortable, heavy feeling in my stomach. I decided to try and make the pudding lighter so that I could still enjoy it, but without the overstuffed feeling.

I must admit, I was skeptical about swapping all of the full fat ingredients for either reduced or nonfat versions. I was afraid that the taste would suffer and not resemble my favorite banana pudding recipe. Boy, was I wrong! I was surprised how good the “makeover” pudding tasted.

This holiday season, the nutritionists at the Center for Nutrition Policy and Promotion have shared some of their favorite holiday recipes during our MyPlate Holiday Makeover Series. Today, we offer a new tip sheet, Make Healthier Holiday Choices to help you improve a few of your favorite recipes and stay healthier during this festive season.  The new tip sheet includes special ways to celebrate with family and friends such as making exercise part of the fun, enjoying all the food groups during your holiday meal, and giving some of your time to help others.

Helping Schools Build Better Cafeterias

As a former school nutrition director, I am amazed when I visit schools around the country and repeatedly witness students clamoring for items like baked kale chips—who would have ever thought that was possible?  Truly, schools have done an absolutely tremendous job of implementing the new meal standards resulting from the Healthy, Hunger Free Kids Act of 2010. I am so proud of all that our nation’s school nutrition professionals have done to provide healthier, tasty meals to the millions of children who eat breakfast, lunch and snacks at school each day.

While schools have made—and continue to make—great strides across the whole realm of school nutrition, they are still facing challenges in meeting their goals.  In particular, many schools across the country do not have appropriate or adequate kitchen equipment.  The need for updated equipment is well-documented, most recently by a new Kids’ Safe and Healthful Foods Project report entitled, “Serving Healthy Meals:  U.S. Schools Need Updated Kitchen Equipment,” and ranges from cutting boards to refrigerator space.  While some schools still need a significant investment in updated and upgraded equipment, many of the needs are simple and could cost as little as $32 to remedy!

We love serving cranberry sauce as a sweet side with our holiday meals -- but, traditional cranberry sauce can be a little too sweet. This year we decided to try something new – cranberry chutney.

This recipe for cranberry chutney was simple to prepare -- all the ingredients go in one pot, and cook for about 30 minutes. And, to save time during the busy holiday season, it can be made 2-3 days in advance.

FNS Takes Nutrition Message to DC United's Youth Soccer Event

The DC United Soccer Club held its “Fall Kick” a couple weeks ago and I was happy to attend and help them mark the end of the fall season. The “Fall Kick” brought together youth ages 6-12 from across the District and Maryland to RFK stadium making it a perfect event to reach out to the local community and spread FNCS’ message of good nutrition and physical activity.

The event featured tournament style matches, DC United players and mascot Talon, music, and educational games involving nutrition and healthy lifestyles. Around 400 kids, their coaches, and parents visited our booth to learn about proper diet and nutrition. I brought with me a set of engaging games such as “Duck, Duck, Fruit!” and the “Eat Smart. Play Hard. Relay” as activities to teach the children key elements to healthy eating.

Giving the Gift of a Healthier Future this Holiday Season

No one should go hungry in America, and certainly no child should go hungry, especially at the holidays.

We know kids who have access to proper nutrition and develop healthy habits at an early age have a competitive advantage in the classroom and later in life. Without easy access to healthy food, kids have a harder time growing up healthy, strong and ready for the workforce.
